St. Louis Butter Cake FAQs

What is St. Louis Butter cake?

Imagine if a cheesecake and a white cake had the perfect child. Flaky top crust, gooey center and moist and sticky bottom layer. Traditionally called “ooey gooey butter cake”, we named ours St. Louis Butter Cake, evoking the rich culinary traditions of the region.

Where can I buy gooey butter cake in St. Louis?

Butter cake in St. Louis is like gumbo in New Orleans: everybody has a recipe and it’s made in thousands of different ways. The cake is served in restaurants, sold in grocery stores, and baked from family recipes in homes across the region. It is considered the "official unofficial" dessert of STL.

Where did Ooey Gooey originate?

The cake originated in St. Louis in the 1930s. A German baker accidentally mismeasured his ingredients while attempting to make his regular cake batter. Instead of throwing the batter out he baked it, resulting in a delectable and memorable classic. Lo and behold... butter cake was born!

Is buttercake and pound cake the same?

Nope. Pound cake has a denser, dryer texture and is not as sweet as butter cake. Butter cake has distinct layers, and a texture more closely resembling a lemon bar or a rich brownie.

What is the best way to cut my St. Louis Butter Cake?

St. Louis Butter Cakes are easiest to cut when they are chilled or frozen.  When you are ready to cut your St. Louis Butter Cake, warm your knife in hot water, before the first cut.  Between each cut, clean your knife with hot water.  This will give you clean cuts and prevent cake from sticking to your knife.

What is the best way to handle my St. Louis Butter Cake?

St. Louis Butter Cakes can be left on the counter at room temp, refrigerated, or frozen.  If kept at room temperature, St. Louis Butter Cakes are best consumed within 2 weeks.  If kept refrigerated, consume within 2 months, and if you decide to freeze your cakes, consume within 9 months.

When will my order ship?

We ship Monday - Thursday to prevent the cakes from sitting in a hot warehouse with our shipping partners.  Orders received before 11am will ship same day (M-TH).  If your cake is ordered after the designated shipping days, it will ship the following Monday.

My shipment arrived and my ice packs are defrosted. Is my cake safe to eat?

The ice packs that are placed with your St. Louis Butter Cakes are designed to melt over time.  This gives your cake(s) the opportunity to defrost over a longer period of time.  Our goal is for your cake to arrive in a defrosted state so that it may be enjoyed right away.

Are you a nut free facility?

We are not a nut free facility.  When we produce St. Louis Butter Cakes that contain nuts, it is done at the end of our production day.  All of our equipment is ran through a high pressure and high temperature dishwasher, and inspected before returning to the floor for regular use.  This minimizes the chances of cross contamination.

Do you have gluten free options?

We do! Our gluten free classic is readily available and can be ordered online or purchased in store.

What is the best way to store my cakes after opening?

For best results after opening, you can use plastic wrap to tightly wrap your remaining cake, then insert into a freezer bag or air tight container.
